Ingredients:
Basmati rice - 1 1/2 cups
Salt to taste
Ghee - 3 tablespoons
Cumin seeds - 1 teaspoon
Cloves - 3-4
Cinnamon - 2 one-inch sticks
Onion sliced - 1 large
Green peas - 1/2 cup
Fresh mint leaves - 1/2 bunch
Fresh coconut scraped - 1/2 cup

Method:
- Pick, wash and soak rice in three cups of water for ten to fifteen minutes.
- Drain and cook rice in four to five cups of salted boiling water till done.
- Drain again and spread on a large plate to cool.
- Heat ghee in a kadai and add cumin seeds, cloves and cinnamon.
- When they begin to change colour, add onions and sauté on medium heat for three to four minutes till light pink.
- Add rice, green peas, fresh mint eaves and coconut and toss to mix well stirring and tossing continuously. Adjust seasoning and continue to sauté for another minute.
- Serve hot.
